In the islands, this is a native favourite. It is served as part of a breakfast, but is a tasty treat any time of day. This recipe serves six to eight people.
You will need: 2 cups of flour, 1 tbsp baking powder, a pinch of sea salt, ¾ cup white sugar, ½ cup softened butter, and 1 cup milk.
Mix all of the dry ingredients thoroughly in a bowl. Drop in butter in small amounts and blend into flour mixture with your hands. Once the mixture is crumbled together, add milk and stir just enough to wet the mixture. Place in a well-greased pan and bake at 350 degrees fahrenheit for 30 minutes.
For a “healthy option,” I like to substitute the sugar with organic raw sugar, the butter for an olive oil based butter and the milk with almond or soy milk. This makes for a healthier cake, packed with even more flavor.
